Pulled Pork Sandwiches (slow-cooked)

I love my crockpot and even during summer months I pull it out to create one of our favorites—pulled pork sandwiches in the crockpot or other slow cooker

Ingredients (serves 6-8)
• 2 lb. pork tenderloin
• 2 TBLS vomFASS Sweet and Spicy BBQ Rub
• 1 large sweet onion, chopped coarse (about 1 cup)
• ¼ cup + extra vomFASS Apple Balsam Vinegar
• ¼ cup + extra vomFASS Red Pepper Extra Virgin Olive Oil
• 1 cup BBQ sauce (optional)
• Salt and Pepper to taste

Directions:
1. Chop onion and place in bottom of crockpot.
2. Trim tenderloins (remove the tough layer of silverskin if present). Season the tenderloins well on all sides with sweet and spicy BBQ rub. Place in crockpot on top of onions.
3. Add the vinegar and oil
4. Cover and slow cook on low for 6 – 8 hours
5. Start checking after 6 hours. You should be able to ‘shred’ the pork with 2 forks.
6. Taste and adjust seasoning with salt and pepper.
7. Add more vinegar and oil for an Eastern Carolina twist.

Recipe Notes:
• If you like more of a saucy style pulled pork sandwich, like Kansas City style, add 1 cup of your favorite BBQ sauce to the crockpot an hour before pork is ready to shred
• Other cuts of pork that can be used: Pork Butt or pork shoulder
• Slow cooking on low is best. Higher temps can dry out your pork
