Our Carolina peaches are in season! This delightful salad is so pretty and perfect for summer entertaining. I like to serve it in Bibb lettuce cups with homemade pita points.
Salad Ingredients
• 3/4 lb. shrimp (cooked)
• 1 avocado, coarsely chopped (do not do this until ready to put together)
• 1 large or 2 small ripe peaches, coarsely diced
• 1/4 medium red onion, slice very thin
• 1 orange, sectioned
• Salt and Pepper to taste
Dressing Ingredients
• ¼ cup vomFASS Bear’s Garlic Extra Virgin Olive Oil
• ¼ cup vomFASS Ginger Grape with Lemon Balsam Vinegar
• 1 TBS TBLS orange juice
• 1 TBLS honey
• 1 chili pepper chopped fine (optional)
• ¼ cup fresh basil leaves, chopped
Dressing Directions: Whisk all dressing ingredients in a bowl and set aside for flavors to marry.
Directions for putting salad together
1. Section orange slices carefully to remove the skin and membrane, set aside.
2. In a bowl combine diced peaches, red onion, grape tomatoes, shrimp and salt and pepper.
3. Add dressing and mix.
4. Stir in orange slices and basil leaves and at very end fold in the avocado.
5. Serve in Bibb lettuce cups with soft pita points
