INGREDIENTS
1/4 cup vomFASS Vodka
1 package pasta, cook to package directions
1 cup pumpkin puree
2 tbsp vomFASS Extra Virgin olive oil
1 garlic clove, minced
1 tsp chili flakes
1 cup heavy cream or milk
1 cup parmesan cheese
2 tbsp tomato paste
1 white onion, diced
salt & pepper to taste
DIRECTIONS
1. Bring a large pot of salted water to boil. Cook pasta according to box instructions. Reserve 1 cup of pasta water and set aside.
2. Heat a large saucepan over med-high heat, add olive oil, onions and garlic. Add chili flakes, salt & pepper and cook down until soft. Add in tomato paste and cook for 6-8 minutes until brown bits form at the bottom of the pan. Deglaze pan with vomFASS Vodka and cook for 3-4 minutes.
3. Add in pumpkin puree and milk/cream. Mix together until combined. Bring temp to low-med and season sauce with salt and pepper.
4. Once pasta is cooked, add in pasta directly to the sauce. Mix together until all pasta is evenly coated and add pasta water as needed to thin out the sauce.
5. Plate and top with plenty of parmesan cheese, black pepper and an extra drizzle of vomFASS Extra Virgin Olive OIl.
