Nutty Collard Greens and Tofu

  1. Drain tofu and press dry with paper towels. 
  2. Cut tofu into small cubes. 
  3. Sprinkle tofu with corn starch and salt and pepper and rub to coat.
  4. Cook rice according to directions. 
  5. Steam collard greens or prepare in microwave according to package directions. 
  6. While greens are cooking, heat Avocado Oil in a wok or sauté pan over medium high heat. 
  7. Fry tofu on all sides until golden brown and place on paper towel to drain. 
  8. When greens are finished, season with soy sauce, Salt and Pepper to taste. 
  9. Turn off heat and toss in greens with pine nuts and remaining oil. 
  10. Toss rice with Sesame Oil and season with salt and pepper to taste. 
  11. Top with greens and tofu and serve.
