Directions:
- Drain tofu and press dry with paper towels.
- Cut tofu into small cubes.
- Sprinkle tofu with corn starch and salt and pepper and rub to coat.
- Cook rice according to directions.
- Steam collard greens or prepare in microwave according to package directions.
- While greens are cooking, heat Avocado Oil in a wok or sauté pan over medium high heat.
- Fry tofu on all sides until golden brown and place on paper towel to drain.
- When greens are finished, season with soy sauce, Salt and Pepper to taste.
- Turn off heat and toss in greens with pine nuts and remaining oil.
- Toss rice with Sesame Oil and season with salt and pepper to taste.
- Top with greens and tofu and serve.
