Directions:
- Preheat oven to 425F, and line a cookie sheet with foil.
- Cut all the vegetables into 1 ½ inch chunks, then toss them in a large bowl with the garlic cloves, thyme leaves, and VOM FASS Basil Extra Virgin Olive Oil until evenly coated.
- Spread the vegetables on the cookie sheet in a single layer.
- Sprinkle generously with VOM FASS Salt and Pepper.
- Place the cookie sheet in the oven and roast for about 45 minutes, turning the vegetables once halfway, until they are tender and beginning to turn golden.
- Drizzle with balsamic vinegar and serve hot. This recipe also works well on the grill!
