When summer calls for something fresh, filling, and full of flavor, nothing hits quite like a Cobb Salad. This version keeps the essentials—grilled chicken, crisp bacon, creamy avocado, and perfectly boiled eggs—but dresses them up with a vibrant vinaigrette made from vomFASS Extra Virgin Olive Oil, Maletti Bianco, Dijon mustard, and fresh herbs.

It's a showstopper salad perfect for warm days, outdoor lunches, or an easy, elegant dinner.

🛒 Ingredients (Serves 2–3)

For the Salad:

  • 1 head iceberg lettuce, chopped

  • 1–2 grilled chicken breasts, sliced

  • 2 hard-boiled eggs, halved

  • ½ cup cherry tomatoes, halved

  • ½ avocado, sliced

  • 4 slices bacon, cooked until crispy and chopped

  • ½ cup cucumber slices

  • ½ cup cooked sweet corn (fresh or canned)

  • Salt & pepper, to taste

For the Vinaigrette:

1. Prepare the Vinaigrette
In a small bowl or jar, whisk together the Dijon mustard, vomFASS Maletti Bianco, garlic, and a pinch of salt and pepper. Slowly drizzle in the vomFASS Extra Virgin Olive Oil, whisking until emulsified. Stir in chopped herbs. Set aside.

2. Assemble the Salad
On a large platter or individual plates, arrange a generous bed of chopped iceberg lettuce.

3. Layer Your Ingredients
Neatly layer the grilled chicken, hard-boiled eggs, tomatoes, avocado, bacon, cucumbers, and corn in rows across the top. Season lightly with salt and pepper.

4. Drizzle & Serve
Spoon the vinaigrette generously over the top, making sure to cover the proteins and veggies. Garnish with extra herbs if desired. Serve immediately.
