It is the start of strawberry season in North Carolina! Strawberries, tomatoes and citrus fruit on a bed of ricotta cheese and drizzled with our aged balsamic "Maletti' make up this delightful spring bruschetta
Ingredients: (serves 10-12)
• 1 1/2 cups diced fresh strawberries
• ½ cup diced clementine, oranges or tangerines
• 1 cup quartered grape tomatoes
• 3 tablespoons thinly sliced fresh basil
• 2 TBLS minced shallot
• 2 TBLS vomFASS Basil Extra Virgin Olive Oil
• 1 TBLS vomFASS Aceto Balsamico Maletti
• Salt and pepper to taste
• 12 oz. Ricotta Cheese
• Crostini
Directions:
1. In a bowl, combine tomatoes, strawberries, citrus fruit and shallot. Gently add in basil extra virgin olive oil and fresh basil. Add salt and pepper to taste
2. Spread a generous layer of ricotta cheese on the crostini
3. Top with bruschetta mixture, drizzle with Maletti and enjoy!
