These parmesan roasted carrots with garlic, honey and orange are a hit all year long. Excellent cold too!!!
Ingredients: (serves 4)
• 1 lbs. carrots, peeled and cut lengthwise into equal sizes
• ¼ cup vomFASS Orange Extra Virgin Olive Oil
• 1 TBLS. minced garlic
• 2 TBLS vomFASS Star Honey Balsam
• ¼ cup parmesan cheese
• ¼ cup panko bread crumbs
Directions:
1. Preheat oven to 400 °F.
2. Mix parmesan and panko in a small bowl, set aside
3. Whisk together olive oil, star honey and minced garlic in a large bowl.
4. Toss carrots into the olive oil/honey garlic vinaigrette. Coat well. Add the parmesan and panko, toss to evenly coat.
5. Spread out onto cookie sheet
6. Roast carrots for 20 minutes, flipping carrots half way through and roast until desired doneness.
