Bill and I love a fresh tomato sauce over pasta and Kat’s recipe hit a home run in our kitchen this week. Made with fresh local colored heirloom tomatoes, not only does it make a beautiful presentation, but it is healthy and delicious. Add garlic toast and a tossed salad and dinner is done!
Ingredients: (serves 2)
- 6 medium size tomatoes cubed (Colored heirlooms work great)
- 6 garlic cloves, chopped
- 1 large shallot, chopped
- ¼ cup vomFASS Basil Extra Virgin Olive Oil
- 1 tsp. Tabasco sauce
- 1 tsp. Sugar
- 2 TBLS fresh basil, chopped
- ¼ cup freshly grated parmesan cheese
- Salt and pepper to taste
Directions:
- In a medium size bowl add cube tomatoes, tabasco, sugar, salt and pepper and mix well. Let sit on counter to marinade for about an hour.
- Sauté shallot and garlic in skillet with vomFASS Basil EVOO for 2 to 3 mins. Add tomato mixture and cook on medium heat 15 min or until tomatoes start to thicken.
- Serve over pasta garnish with fresh basil and parmesan
