Arugula and Nectarine Salad

Salads are always interesting when you incorporate fruit and nuts like the nectarines and pistachios in this delicious salad

Ingredients (serves 2-4)
• 4 cups arugula
• 1 small romaine head, chopped
• 3 nectarines, thinly sliced
• 1 TBLS thyme, leaves only
• 3 TBLS lemon juice
• 2 TBLS vomFASS Don Carlos Extra Virgin Olive Oil
• Salt and pepper to taste
• 3 TBLS pistachios, shelled and roughly chopped

1. Place arugula, romaine, nectarine, and thyme in a mixing bowl. Add the lemon juice, EVOO, salt and pepper and toss lightly.
2. Arrange on a platter and top with chopped pistachios
