Risotto with Shore Crabs

  1. Pour hot water over the tomatoes then peel, seed and dice. 
  2. Heat VOM FASS Grape Seed Oil in pan then add shallots and cook until fragrant. 
  3. Add zucchini and garlic and sauté until the zucchini is tender. 
  4. Add in the rice and heat for one minute.
  5. Add the Chardonnay and allow it to reduce slightly. 
  6. Slowly add the chicken stock, stirring constantly, then cover and for 20 minutes. 
  7. Fold crab and tomatoes in the risotto to warm them, then season to taste with VOM FASS Salt and Pepper. 
  8. Stir in parsley and Parmesan cheese to finish.
