Directions:
- Pour hot water over the tomatoes then peel, seed and dice.
- Heat VOM FASS Grape Seed Oil in pan then add shallots and cook until fragrant.
- Add zucchini and garlic and sauté until the zucchini is tender.
- Add in the rice and heat for one minute.
- Add the Chardonnay and allow it to reduce slightly.
- Slowly add the chicken stock, stirring constantly, then cover and for 20 minutes.
- Fold crab and tomatoes in the risotto to warm them, then season to taste with VOM FASS Salt and Pepper.
- Stir in parsley and Parmesan cheese to finish.
